75 g diced red onion
20 g olive oil
0.5 g lemon thyme
10 g honey
25 g sugar
20 g rice vinegar
200 g diced peach
20 g diced Granny Smith
100 g diced tomato
 
4 pieces of blue cheese (Gorgonzola type)
fried onions
Fry the onion in olive oil with the lemon thyme. Add honey and sugar. Caramelize slightly. Add the vinegar and boil briefly. Add the peach and apple. Bring to the boil. Add the tomatoes and cook dry. Let cool. 
 
Serve with a piece of blue cheese
Garnish with some fried onions
