Annemie Dedulle has a passion for truffles. Since 2000 she imports and sells truffles. Today she provides truffles to almost all restaurants in Belgium and several restaurants in the Netherlands and France.
The Tuber melanosporum, or black truffle is the most fragrant and expensive among the black truffles. Its colour varies from anthracite to black and its skin is covered with fairly regular warts. Its brown flesh is traversed by whitish, slightly transparent venules that oxidize quickly when exposed to air. The truffle grows from Limoges to Toulouse in south-western France and in the provinces of Dordogne, Lot and Tarn. Black truffle can only be found beneath oak trees and is harvest from mid-December till March. He has an earthy smell and a nutty aroma.
