How to combine Oyster?

For an overview of possible combinations with a product such as oysters, we have developed a visualization called a Foodpairing tree. Below you can see the Foodpairing tree of fresh oyster.


How do you read this Foodpairing tree?

In the center you see the chosen ingredient that we want to combine, namely fresh oyster.
Around are all the products where you can combine the oyster with.

The products are divided into categories:

In each category there are products closer or farther from the center. The distance gives an indication of how well the products combine. The closer, the better. For example, in the fish category we see that kelp better combines with oyster than salmon.

If we compare the Foodpairingtree of oyster with classic combinations, we find them all back in the Foodpairingtree. Think of oyster - lemon / oyster - pepper / oyster - spinach (oyster au gratin) / oyster - red wine vinegar (with shallots). Foodpairing explains classic combinations.

But more interesting is that Foodpairing also shows which new combinations are possible.

What new combination can be made with oyster?

We can make a new variant of the oyster-lemon combination, by looking for another fruit in the fruit category.
There we find kiwi and passion fruit. We choose for passion fruit as it is also has a sour taste.

Ingredients:
4 oysters
2 passion fruit

Method:
Open the oysters and if necessary wash in some salted water.
Halve the passion fruit and remove the flesh from passion fruit with a spoon.
Lay a teaspoon of passion fruit on the oyster.
Serve immediately.
