Dominique learned his cooking skills at Ter Groene Poorte in Bruges. He discovered his love for chocolate when working with Pierre Hermé and Pascal Brunstein. In 1992 he started The Chocolate Line in Bruges. This “shock-o-latier” surpasses the limits of traditional chocolate making. His greatest passion is seeking out new flavours and different combinations. The store is now one of only 3 chocolate stores to be included in the Guide Michelin. His creations are served (among others) at Oud Sluis and Hertog Jan. For Dominique taste and aroma are the central elements of his work. He is always looking for the perfect balance and works only with top quality ingredients.
