Born on July 22nd 1977 in Dendermonde, Gert was destined to become engineer, but after high school, he decided to follow his dream and learn how to cook. After finishing his education he learned the tricks of the trade at ‘t Molentje in Zeebrugge. This is also where he got to know sommelier Joachim Boudens, who was awarded the best sommelier award of Belgium 2005. Together they took over restaurant Hertog Jan. The restaurant’s traditional, conventional kitchen was transformed into a revolutionary kitchen, notable for the distilled way in which flavours, structures and contrasts take shape. Gert makes sure his main ingredients are unmistakable by using short cooking times. Garnishes are used to lift the flavour, while sophisticated herb and spice mixes provide original aromas. His creations are striking for their contrasts: tender/crunchy, salty/bitter, hot/cold. All this makes eating a thrilling experience. In 2006 they were awarded with their first Michelin star and in 2009 with their second followed by a third in 2011.
