The well known Tom Collins recipe, first memorialized in writing in 1867, is made from gin, lemon juice, sugar and carbonated water.

Here we simply replace the soda water by ginger ale soda and the sugar syrup by pear syrup.

ingredients

  • 50 g pear juice
  • 50 g sugar
  • 50 ml gin
  • 30 ml pear syrup
  • 20 ml lemon juice
  • ginger ale soda
  • one fresh pear
  • mint

preparations

Pear syrup

Bring the pear juice and the sugar to a boil and let reduce and cool.

Assembly

Fill your glass with icecubes. Add the gin, pear syrup and lemon juice. Top off with ginger ale. Garnish with slices of pear (like you would slice cumcumber for a gin & tonic) and some mint leaves.
