Red cabbage cocktail made with food waste

Before you toss the outer leaves of those red and purple cabbages, turn them into a flavorful powder that’ll add instant color to any cocktail or dish. This trick comes in especially handy if you’re trying to reduce food waste in the kitchen. Red cabbage isn’t an ingredient often featured on cocktail menus, but this brightly hued Brassica contains a green-grassy note that pairs beautifully with the botanicals in Gin Mare. A refreshing squeeze of lime brings out the gin’s citrusy-orange and spicy-camphor notes, while balancing out the red cabbage cocktail’s overall sweetness from the freshly squeezed orange juice and cinnamon.

preparation

Preheat your dehydrator to 50ºC. Arrange the red cabbage leaves on the dehydrator trays to dry. Remove the cabbage leaves once fully dehydrated and transfer to a food processor.

Pulse the leaves until they turn into a fine powder.

  • 40 g Gin Mare
  • 15 g cinnamon syrup
  • 30 g freshly squeezed orange juice
  • a shot of freshly squeezed lime juice
  • Red cabbage powder (recipe above)

preparation

Combine all of the ingredients in a shaker with ice. Shake and strain into a chilled glass.
