Ketchup – chocolate – vodka – Absinthe – Cynar – Lemon

We were a bit surprised when Foodpairing stopped by at Old Fashion and handed over a bar of dark chocolate and ketchup, challenging us to use this Foodpairing Impossible in a cocktail. After looking for the right matching ingredients and a some experimenting, the Alcatraz was born.

Ketchup and chocolate have aromatic connections and therefore you combine them in a cocktail. (Read more on this impossible pairing). Adding a pinch of salt reduces the bitterness of the chocolate. Lemon juice not only adds some sourness, but also a citrus aroma that connects with vodka and tomato. Absinth’s herbal side connects with similar herbal notes in ketchup.

The Alcatraz

Ingredients

  • 30 ml vodka
  • 20 ml Cynar
  • 10 ml lemon Juice
  • 5 ml Rich syrup (2/1)
  • 2 barspoons ketchup
  • 1/2 barspoon La Coquette Absinthe
  • Pinch of salt
  • 7 drops of Xocolatl Mole Bitters

Preparations

Chill the glass. Add ingredients to shaker, add ice and shake well. Fine strain into chilled glass. Cut lemon zest and slightly touch the rim of the glass.

Have a little sip and enjoy. You can always stop by at Old Fashioned for the Alcatraz!
