Preparations
- 165 g Chavroux
- 90 g Whipped cream
- 22,5 g Milk
- 30 g Icing sugar
- 75 g Strawberry
- 10,5 g Icing sugar
- 3 Butter crisps , Jules Destrooper
- Lemon zest
Blend the Chavroux with the cream, milk and powdered sugar until smooth. Blend fruit with 7 g powdered sugar. Strain. Crumble the butter waffles.
Assembly
- 18 Strawberries
- Basil
- Lemon zest
Put a large spoon of Chavroux on a plate. Disperse with the back of the spoon. Halve the remaining strawberries and arrange on the Chavroux. Add some coulis. Grate some peel of lemon or lime over the strawberries. Season with some basil leaves and a spoon of crumbled butter waffle.
