Black garlic is not commonly used in a dessert, however its warm and spicy notes link it to fruity and roasted ingredients. So why not try it in a dessert?
Its warm spicy notes link the black garlic to plum. On another note, the fruity, roasted aromas of the garlic we can also find in the aroma-profile of chocolate and strawberries. This makes it a perfect ingredient for a sweet dessert.

Preparations (6 persons)
Soupe
- 50 g Inaya chocolate
- 50 g Cream
- 15 g White sugar
- 100 g Water , hot
Bring the cream and sugar to a boil. Pour on the chocolate and mix until homogenous. Allow to cool to 37°C. Add the water and mix. Place in the refrigerator.
Ice cream
- 200 g Milk
- 40 g Cream
- 15 g Skimmed milk powder
- 45 g Black garlic puree
- 25 g White sugar
Bring the milk with the sugar and milk to a boil. Allow to cool. Add the remaining ingredients and mix. Turn into ice.
Plums
- 160 g Plum
- 50 g White sugar
- Pinch of Cinnamon
- Pinch of Star anise
- Pinch pod Bourbon vanilla
Halve the plums. Remove the seeds. Mix the remaining ingredients and place in the refrigerator for at least 12 hours.
