Phase
A homogenous food system, which may consist of 1 or multiple ingredients prepared by a recipe. A phase is described by a singular set of sensoric dimensions, phases form the sensoric building blocks of a dish, not ingredients, though it is possible to have single ingredient phases. Examples: mashed potatoes, a cocktail (w/o garnish, that would be a different phase). For some modalities and with low impact preparation methods, the sensoric dimensions of a phase can be calculated based on its ingredient dimensions and quantities (e.g. taste and flavor of cocktail). In other cases, such asĀ for the texture modality, it is always defined on phase level and it can not be calculated from its ingredients.
